JPB’s menu celebrates Australian produce, global influences, and Swiss culinary mastery. Led by executive chef Paul Clune, each dish is beautifully executed and lavish in celebration of colour, texture and flavour.
The Spanner Crab Meat sits atop carrot puree with native samphire, shavings of carrot and hazelnut crisps. Goats cheese and candied walnuts wreath a whole roasted beetroot dish, and the Aylesbury Duck Breast is paired with glazed celeriac, orange jus and pickled spices.
While it’s hard to look past the dessert menu’s Chocolate Ganache (it’s served with toasted sesame seeds, mocha gel and truffle), the gluten-free Australian Angel is a dream, made up of coconut mousse with raspberry gel and meringue.
The wine list has an emphasis on Australian wines, name-checking all of Australia’s finest wine regions. Of course there are also spectacular international wines to pair with your dishes, too.
